Martin's Big Birthday Meal
It’s Martin’s birthday! Brother is now 9 and, as to be expected, the family celebrates with food. They start the day with Martin’s new favorite breakfast - buttery warm toast with sauteed spinach and perfect poached eggs on top - and end with Martin’s Big Birthday Meal of butternut squash macaroni and cheese, followed by a very special carrot birthday cake with cream cheese icing.
Maybe you’d like to celebrate Martin’s birthday too! We’ve compiled some tips and recipes to help you along.

Homemade Butter
And if you have time, why not make your own butter? Kids can learn where their food comes from, and it’s an exciting activity for even the littler listeners. Here’s a great tutorial from Healthy Little Foodies - all you need is heavy whipping cream and a jar with a lid.
Spread the homemade butter on toast and top with sautéed spinach and your poached egg, just like Martin does.
Butternut Squash Macaroni and Cheese
For the special birthday dinner, Martin and Sylvia and Momma and Daddy enjoy butternut squash macaroni and cheese. We make this often, using our very own Sparkle recipe here.
We love the golden creamy texture, and it's a perfect vehicle for adding extra veggies into a meal.
Carrot Cake
And now it’s time for the cake! Martin has a Very Special Carrot Cake with cream cheese icing for his birthday.
Try this one, with orange cream cheese frosting, from All the Healthy Things.
Or, if you prefer, this vegan version from Jessica in the Kitchen
Enjoy! And happy 9th birthday to Martin!
